Rainbow Power Salad with Pomegranate Crunch

Ingredients

  • 100g baby spinach leaves
  • 1 large orange, peeled and segmented
  • 1 ripe avocado, sliced
  • 150g cooked beetroot, cubed
  • 1 large carrot, julienned or spiralized
  • 100g feta cheese, crumbled
  • 60g Just Live a Little Pomegranate & Almond Topper

This vibrant salad delivers antioxidants, healthy fats, and satisfying protein - perfect for lunch or a light dinner.

Method

  1. Whisk all dressing ingredients until smooth, adding water gradually to achieve the desired consistency.
  2. Arrange spinach on a large platter or divide it between bowls.
  3. Create colourful sections with orange segments, avocado slices, beetroot cubes, and carrots. 
  4. Scatter feta and drizzle with honey tahini dressing. 
  5. Finish with a generous sprinkle of Pomegranate & Almond Topper for the perfect sweet-tart crunch.
