Maple pecan french toast


  • Gluten-free bread of choice, cut into thick slices
  • 3 medium eggs
  • 180ml milk (almond or oat milk works fine too)
  • 50ml of maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch of salt
  • 100g Just Live a Little Maple & Pecan Granola
  • 1 tbsp almond flour
  • 1 tbsp coconut oil, melted
  • 50g of pecan nuts
We’ve given toast the ultimate cozy makeover. Our Maple Pecan French Toast is a gluten-free indulgent twist on a classic. Perfect for weekend brunching, or as an evening snack.

  1. Grease a baking pan and layer the bread pieces across the dish
  2. Whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon and salt and pour over the bread, so it is evenly coated. Cover and chill for at least 1 hour.
  3. Mix together the granola, almond flour and coconut oil. Remove bread from the refrigerator and sprinkle granola on top. Top with pecan nuts.
  4. Preheat oven to 180°C fan. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
  5. Cool slightly before drizzling with a little more maple syrup.
