Caramelised Apple Overnight Oats (Meal Prep)

Ingredients

  • 120g rolled oats
  • 360g Greek yogurt
  • 240ml milk
  • 3 tsp chia seeds
  • 2 tbsp runny honey (for the oats)
  • 3 small red apples
  • 3 tsp unsalted butter
  • 1 tsp ground cinnamon
  • 1½ tbsp runny honey (for the apple)
  • 1 tbsp peanut butter (per serving)
  • 25g Just Live a Little Peanut Butter & Red Apple Granola (per serving)

Method

  1. Prep the oats: In a large bowl, mix oats, Greek yogurt, milk, chia seeds, and 2 tbsp honey until combined. Divide evenly into 3 containers, cover, and refrigerate overnight (or minimum 4 hours).
  2. Caramelise the apples: Dice apples into small cubes. Heat butter in a pan, add apples, sprinkle with cinnamon, and drizzle over 1½ tbsp honey. Cook for 5-6 minutes until soft, golden, and sticky. Let cool slightly.
  3. Assemble the bowls: The next morning, remove containers from the fridge. Top each with caramelised apple, 1 tbsp peanut butter, and a handful of Just Live a Little Peanut Butter & Red Apple Granola.
  4. Serve or store: Enjoy immediately or keep covered in the fridge for up to 3 days.
