Caramelised Apple Overnight Oats (Meal Prep)
Ingredients
- 120g rolled oats
 - 360g Greek yogurt
 - 240ml milk
 - 3 tsp chia seeds
 - 2 tbsp runny honey (for the oats)
 - 3 small red apples
 - 3 tsp unsalted butter
 - 1 tsp ground cinnamon
 - 1½ tbsp runny honey (for the apple)
 - 1 tbsp peanut butter (per serving)
 - 25g Just Live a Little Peanut Butter & Red Apple Granola (per serving)

        Method
- Prep the oats: In a large bowl, mix oats, Greek yogurt, milk, chia seeds, and 2 tbsp honey until combined. Divide evenly into 3 containers, cover, and refrigerate overnight (or minimum 4 hours).
 - Caramelise the apples: Dice apples into small cubes. Heat butter in a pan, add apples, sprinkle with cinnamon, and drizzle over 1½ tbsp honey. Cook for 5-6 minutes until soft, golden, and sticky. Let cool slightly.
 - Assemble the bowls: The next morning, remove containers from the fridge. Top each with caramelised apple, 1 tbsp peanut butter, and a handful of Just Live a Little Peanut Butter & Red Apple Granola.
 - Serve or store: Enjoy immediately or keep covered in the fridge for up to 3 days.
