Berry & Granola No-Bake Cheesecake
Ingredients
- 150g Just Live A Little Raspberry, Coconut & Cashew Granola
- 50g butter
- 250ml heavy cream
- 250g mascarpone
- 1tsp vanilla extract
- Handful cut strawberries

Method
- Add granola to a small food processor and blend for 15 seconds. Melt the butter and combine with the granola, until the granola begins to stick together.
- Place in lined loaf pan and press down firmly.
- Whisk the heavy cream with an electric mixer for 2 minutes, until thick and fluffy. Add mascarpone and vanilla extract and whisk for another 20 seconds and then fold together.
- Spread evenly over the granola base and top with cut strawberries and a sprinkle of granola.
- Refrigerate for 2 hours to set.
